Protein Birthday Cake Blondie Recipe

It’s hard to get rid of some fond childhood memories — especially that yummy birthday cake mom used to make. You know the one where you secretly tasted the batter and the icing before it was finished … and then grabbed the corner piece with the most icing on it… Perhaps you are baking for your family or friends now. Even if it is just for yourself this recipe will make any mouth water – whether it’s their birthday or not!

You might think your metabolism can’t handle that kind of decadence anymore, but you’d be wrong. Here’s a smooth, satisfying dessert that holds the carbs and ups the protein, all the while brightening your day with must-have rainbow sprinkles.

Birthday Cake Protein Blondies

Ingredients

4 scoops vanilla protein powder
1 cup coconut flour
1/3 cup honey
1 egg white
1/2 cup plain Greek yogurt
1 1/2 cups almond milk
Rainbow sprinkles

Directions

  1. Preheat oven to 350 degrees F, and coat a 8? x 8? baking pan with non-stick cooking spray.
  2. In a large bowl, combine all of the ingredients, waiting to add the sprinkles at the end.
  3. Pour the cake mixture into the prepared pan, and bake 30 minutes.
  4. Cut into squares and enjoy!
